Thai Pizza, How We Love Thee



Ingredients:
  • 1 pre-made pizza crust
  • 1/2 c. plum sauce
  • 1/2 tsp. red pepper flakes
  • 10 oz. shredded provolone
  • 1/2 red bell pepper: cored, seeded, sliced
  • 1 tbsp. vegetable oil
  • 2 tbsp. soy sauce
  • 1 tbsp. smooth peanut butter
  • 2 tsp. hot sauce
  • 2 tsp. grill seasoning
  • 1 lb. extra-firm tofu, cubed
  • 2 tbsp. honey
  • 2 tbsp. cider vinegar
  • 1/4 seedless cucumber: cut into matchsticks
  • 4 scallions, sliced
  • 1 c. bean sprouts
  • lots of cilantro
  • 1/4 c. roasted peanuts
Directions:
  • Spread pizza crust with plum sauce (like pizza sauce). Sprinkle on red pepper flakes, cheese, and red peppers. Bake in oven 15-17 minutes at 425 degrees.
  • Combine oil, soy sauce, peanut butter, hot sauce, and grill seasoning in bowl. Heat in microwave 10ish seconds to loosen peanut butter. Marinate tofu in mixture for 10 minutes, then toss in pan and stir-fry until heated through.
  • Mix honey and vinegar to make dressing. Toss cucumber sticks in dressing.
  • When pizza comes out of the oven, top with tofu, scallions, sprouts, and cilantro. Drain cucumbers and sprinkle over the top. Garnish with peanuts.
  • Enjoy!
Note: The original recipe called for chicken, if you're into that sort of thing ;)
