Friday Food Recap

Monday:  Cheddar and Gruyere Broccoli Soup  (hat tip to Mama P)
Tuesday:  Curried Lentils and Cauliflower with Brown Rice
Wednesday:  Spinach and Sun-Dried Tomato Frittata (subbed in our oven baked cherry tomatoes; huge hit) served with fresh fruit
Thursday:  Spiced Pumpkin Pancakes
Friday:  Leftovers

And at least once a week, these apples appear on the table:

4 apples, peeled, cored, quartered, and sliced
2 tablespoons butter
Maple syrup to taste
Cinnamon to taste

Melt the butter in a saucepan over medium heat.  Add in the maple syrup and stir for about 30 seconds to warm it up.  Add in apples and sprinkle cinnamon over the top.  Stir.  Cover with lid and let simmer for about 10 to 15 minutes, stirring occasionally, until the apples start to fall apart.  Enjoy.

Christina's note:  We go heavy heavy on the cinnamon.  Yum.

It's basically like eating apple pie filling without the troublesome crust.  Useful for bribery.  Also makes an excellent vanilla ice cream topping.  See how versatile it is?  :)

Sounds great! We have a couple sacks full of apples and more on the way, so I will definitely give this a shot.

Mmmmm...we recently found a similar apple recipe and have been eating them on pancakes, but I like your ice cream idea. I love posts like this. I really need food inspiration right now. I'm so impressed with the variety of veggies you and Mama P get your kids to eat. You're on to something.
